In celebration of Thanksgiving day today, it’s time to be grateful for this amazing planet, the wonderful family, friends and people that surround us, the incredible living creatures that co-habit with us—and the bountiful food that this extraordinary earth brings. With that being said, let us also be very thankful for health and happiness—and honor our bodies with nutritious, natural foods.
To celebrate this festive day of food and giving thanks, I’ve been inspired to create two healthy but truly tasty recipes that will compliment your Thanksgiving feasts—and also fuel you on this very busy day of cooking and entertaining.
I’ve whipped up a Butternut Squash Protein Smoothie that’s filled with fiber, will nourish you and keep you satisfied as a snack while you wait to have Thanksgiving dinner, and a Pumpkin Protein Pecan Pudding that will satisfy your sweet tooth without the heavy calorie dessert drawbacks, all made using my fave wellness products from Garden of Life and my kitchen virtuoso, my Vitamix 780 blender.

Butternut Squash Protein Smoothie
INGREDIENTS (serves 1):
1 cup Almond Milk
1 scoop Garden of Life RAW Organic Protein in Vanilla Spiced Chai
1 tablespoon of Garden of Life Dr. Formulated Organic Prebiotic Fiber in Citrus
1/2 cup of Organic Butternut Squash puree
1 whole banana (medium to large)
1 tsp real vanilla extract
1 tsp ground cinnamon
1 tsp ground nutmeg
4 ice cubes (optional, gives the smoothie a nice chilled and creamy consistency)
1 teaspoon of RAW unsalted pumpkin seeds (to use as topping)
DIRECTIONS:
Pour all ingredients into blender in the order listed above (except for the RAW unsalted pumpkin seeds) and blend.
Pour into a cup, then sprinkle 1 teaspoon of RAW unsalted pumpkin seeds to use as nutritional topping.

Pumpkin Protein Pecan Pudding
INGREDIENTS (Serves 4):
2 cups Coconut Milk
2 scoops Garden of Life RAW Organic Protein in Vanilla
1 cup Pumpkin Puree (not pumpkin pie filling)
2 teaspoons of Cinnamon
1-2 tablespoons of maple syrup (used to slightly sweeten the pudding)
1 cup organic frozen mixed berries (blueberries, blackberries, and raspberries)
1/4 cup of Pecans (to use as nutritional topping after blending. You can also substitute and add your fave nuts like almonds or walnuts)
1 tablespoon of dried cranberries (to use as a tangy topping to balance out the pudding’s sweetness)
DIRECTIONS:
Pour all ingredients into blender in the order listed above, except for the pecans and dried cranberries RAW unsalted pumpkin seeds. Blend.
Pour and evenly distribute into 4 small dessert bowls, then sprinkle the ¼ cup of Pecans and 1 tablespoon of cranberries equally as topping for added nutritional value and crunchy-tangy texture.
Place in freezer for 20 minutes, or place inside of refrigerator for 40 minutes. Then serve chilled and enjoy.
